Ingredients
3 tbsp soy sauce
1 tbsp rice wine
1 tbsp minced garlic
1 tsp chicken powder
½ tbsp corn starch
½ tsp dark soy sauce
freshly ground black pepper
1.5 lb chicken thighs bone-in skin-on, cut into bite-sized pieces
1 can (822g) goya red kidney beans
6 oz sliced smoke polska kielbasa
8 chicken feet, cleaned and blanched (optional)
1 large onion, cut into wedges
6 smashed garlic cloves
1 tbsp tomato paste
1 habanero pepper, sliced (without seed) ??
14 whole allspice
1 bay leaf, fresh or dried
600 ml boiled water
freshly ground black pepper
1 stalk fresh parsley, chopped
steamed rice
Directions
For the Chicken
In a small bowl combine the marinade ingredients. Whisk to combine.
Cut the chicken thighs into bite size pieces.
Combine chicken with the marinade sauce in a bowl and mix well.
Cover and marinate in the fridge overnight.
For the Red Bean Chicken
Preheat the sauce pan over medium-high heat and add 2 tablespoon vegetable oil.
Add garlic, habanero pepper, tomato paste and cook until fragrant for 1 minute, stirring constantly.
Add the chicken and cook in 3 minutes on each side or until lightly brown.
Add onion, red kidney beans, whole allspice, smoke polska kielbasa and chicken feet and stir fried for 1 minute.
Add water and bring to boil. Reduce heat to medium low and simmer covered for 45 minutes.
