Bruine Bonen met kip

Red Beans with Chicken – “Bruine Bonen met Kip” is one of the most popular dishes in multi-cultural Suriname. So flavorful! The beans and chicken are cooked perfectly tender, served with rice and garnished with parsley.

Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp rice wine
  • 1 tbsp minced garlic
  • 1 tsp chicken powder
  • ½ tbsp corn starch
  • ½ tsp dark soy sauce
  • freshly ground black pepper
  • 1.5 lb chicken thighs bone-in skin-on, cut into bite-sized pieces
  • 1 can (822g) goya red kidney beans
  • 6 oz sliced smoke polska kielbasa
  • 8 chicken feet, cleaned and blanched (optional)
  • 1 large onion, cut into wedges
  • 6 smashed garlic cloves
  • 1 tbsp tomato paste
  • 1 habanero pepper, sliced (without seed) ??
  • 14 whole allspice
  • 1 bay leaf, fresh or dried
  • 600 ml boiled water
  • freshly ground black pepper
  • 1 stalk fresh parsley, chopped
  • steamed rice

Directions

For the Chicken

  • In a small bowl combine the marinade ingredients. Whisk to combine.
  • Cut the chicken thighs into bite size pieces.
  • Combine chicken with the marinade sauce in a bowl and mix well.
  • Cover and marinate in the fridge overnight.

For the Red Bean Chicken

  • Preheat the sauce pan over medium-high heat and add 2 tablespoon vegetable oil.
  • Add garlic, habanero pepper, tomato paste and cook until fragrant for 1 minute, stirring constantly.
  • Add the chicken and cook in 3 minutes on each side or until lightly brown.
  • Add onion, red kidney beans, whole allspice, smoke polska kielbasa and chicken feet and stir fried for 1 minute.
  • Add water and bring to boil. Reduce heat to medium low and simmer covered for 45 minutes.
  • Add freshly ground black pepper to taste.

To Serve

  • Add chopped fresh parsley for garnish.
  • Serve with rice.
